Kate Saunders, founder of Blackberry Cottage, has not only created a range of vegetable cakes but successfully made the vegetables the largest ingredient whilst maintaining the taste of a regular cake. Along with regular ingredients you will also find alternative flours such as gram and rice, alternative sugars and with the vegetables as the largest ingredient they can help reduce refined sugars and fats, in some recipes, none are added.
As well as baking, they run several courses throughout the year where classes of small groups are inspired into a whole new way of thinking about baking cakes using vegetables.
Blackberry Cottage has won numerous awards, attends prestigious food festivals, give talks and demonstrations at food fairs, County Shows, schools and many more events.
